The Everyday Salad

We call this salad “The Everyday Salad” because you could literally eat it everyday. Perfectly healthy and easy to make. The easiest thing to prepare ahead of time and throw in some tupperware for an office lunch. We hope you love!


The Everyday Salad

*This recipe serves one, add more for more people

2 big handfuls of arugula

1 tablespoon of finely diced red onion

1/2 a cup of cooked quinoa

1/4 cup of garbanzo beans

1/2 a diced avocado

1 1/2 tablespoons of olive oil

juice of 1 lemon

To make the dressing, whisk together the olive oil and lemon juice until combined. You can play around with the proportions depending on how lemony you like it. Add salt and pepper to taste.

Combine the rest of the ingredients in a large bowl. Add dressing. Add salt and pepper to taste. Enjoy!
